Ingredients
Cake:
1/2 cup butter
1 egg
1/4 cup sugar
1 1/2 tsp. vanilla
1 3/4 cup flour
3 tsp. baking powder
3/4 cup milk
apples
Topping:
1/4 cup sugar
1 tsp. cinnamon
Sauce:
1 cup apple cider
1 tbsp. corn starch
2 tbsp. butter
1 tbsp. lemon juice
Directions
Preheat the oven to 350°F.
Cream together butter, egg, sugar, & vanilla. Mix the flour & baking powder together separately. To the creamed mixture, alternately add the flour mix & milk to form a batter. Pour the batter into a 9x13" dish and spread evenly. Peel and slice some apples and press a layer of apple slices into the surface of the cake. Mix the topping in a small bowl, then sprinkle evenly over the apples. Bake for 50–60 minutes (if you're using a glass dish, it will be done in 50 minutes).
While the cake it baking, make the apple cider sauce. Mix together apple cider & corn starch in a saucepan over medium-low heat, stirring until thickened and clear. Remove from heat and add butter and lemon juice. Mix and pour over the warm cake. Chill and serve!
